Miriam Cózar Chef
I always admired how my maternal grandmother was able to create the most delicious, love-filled dishes with nothing more than a handful of vegetables from her garden. Her knowledge did not come from books or science, but was borne of love, tenderness and the deep lived history of our community.
She has been my most important influence as a chef. In my cooking, I seek to bring forth the apparent simplicity of the products I use, and the memories of childhood love which have matured into a passion for tastes and textures that tell stories.
